Gluten-Free Granola Recipe — Menu Plan October 15

I’m making granola this week for some healthy breakfast, lunch, and snack choices. I like to keep a small bowl of it out for snacking. But it’s also great to top yogurt, ice cream, cooked fruit, etc. (You know how you like it.)

I absolutely love the smell of this cooking! The scents of cinnamon, coconut sugar, and maple syrup fill the house. The recipe comes together very quickly, and the resulting granola sometimes disappears a little too quickly. 🙂 Feel free to make a double batch on a full sheet pan if you have the same problem.

 

Gluten-Free Granola with Nuts and Dried Fruit

Ingredients

2 Cups gluten-free Rolled Oats
1-1/2 Cups Unsalted Mixed Nuts, roughly chopped
3/4 Cup Dried Cranberries
1/2 Cup Coconut Sugar
2 Tbsp Flax Seed Meal
1-1/2 Tsp ground Cinnamon
1/4 tsp Salt
1/4 Cup Coconut Oil, melted
1/4 Cup Maple Syrup

Directions

  1. Preheat oven to 325° F. Put parchment paper on a half sheet pan.
  2. In a large mixing bowl, combine the ingredients in order of list. Stir and mix well to evenly combine all ingredients.
  3. Pour out the granola mix onto the pan lined with parchment paper. Spread it evenly across pan.
  4. Bake at 325° F for 30-35 minutes.
  5. Let it cool, then stir and/or break up as you desire. Store in a sealed container or plastic bag.

Notes

  • I like to have chunks of granola to pick up by hand. If you prefer to have a loose bowl of granola to pour over yogurt or other tasty treat, stir up the granola before it cools down.
  • Adjust this recipe to your taste. Don’t be afraid to change up or omit the nuts, the fruit, and even the flavors to make it just the way you like it.
